Roasted Peppers

Bell peppers are great dinner selection if you are looking for something to eat with low calories. So what do you do with peppers other than place them in your fancy healthy salads, why not roast them? Bell peppers are high in vitamin C and rich with antioxidants.  Fill your peppers with some feta cheese and add spinach to the inside if you want to ensure you are eating some greens.

Cook time: 30-40 minutes

Ingredients:
·         1 chicken fillet breast
·         1 bell pepper
·         Spinach
·         Feta cheese
·         Honey
·         ½ a lemon (optional)
·         Black pepper
·         Lemon juice
·         Dark soy a sauce
·         Parsley optional)

Cooking
  1. Start by washing your chicken with lemon juice and cold water, once drained add a small bit of dark soy a sauce over your chicken.
  2. Turn your stove to a medium to high heat and place your chicken in the pan, allow your chicken to fry 5-8 minutes each side.
  3. Once the chicken is has browned place into your oven on a baking tray and allow it to cook for a further 25 minutes.


Stuffed Peppers
  1. Slice your peppers into half removing the seeds and wash them.
  2. Boil some spinach for no longer than 5 minutes then slice and place your spinach into the peppers layering it with some feta cheese.
  3. Place these into your oven and cook for 20 minutes.


Nearly finished
  1. Once your chicken is cooked slice it on your plate and drizzle honey over it.
  2. Your peppers should be cooked by now too. Add a little parsley and black pepper over it to add flavour.
  3. Optional: slice a lemon into half and drizzle over your chicken.
