Salmon, Potatoes and Greens

Steamed Salmon Potatoes and greens
Cook time: 35-40 minutes
Ingredients:
·         Boneless salmon fillets
·         ½ red pepper segment
·         ½ yellow pepper segment
·         Parsley
·         1 spring onion
·         Small white onion segment
·         Salt
·         Butter
·         Black pepper
·         7 baby potatoes
·         Broccoli
·         Asparagus


Cooking

Salmon
  1. Start by making some seasoning for the salmon, you will need to cut up your red pepper, yellow pepper, spring onion and white onion and be ready to add these in whilst you are cooking your salmon.
  2. Heat your pot on a medium to low heat; once your pot is heated you will need to add 1-2 table spoons of butter. Place your salmon fillets into the pot with the skin facing downwards and allow your salmon fillets to fry.
  3. Fry your salmon for 5-10 minutes each side, it should fry quickly.
  4. Once you see that the salmon fillet is frying you will need to add the seasoning to the pot and sprinkle some black pepper over your salmon.
  5. Fry for 1-2 minutes longer then add hot water to your pot enough to just cover your salmon. Cover your salmon with your pot lid and allow your salmon to steam cook for about 15-20 minutes.

Potatoes
Suggestion: start cooking your potatoes the same time you start frying your salmon
  1. You will want to wash your baby potatoes and place them into a pot with water and boil them. The potatoes should take on average around 20 minutes to boil on a high heat.
  2. Once boiled drain the water and turn your stove to a low heat.  Place your boiled potatoes back onto the stove and add 3 spoons of butter and sprinkle parsley over the potatoes. The potatoes should be finished in about 3 minutes.

Greens:
  1. Chop your asparagus into halves and if not already chopped; chop your broccoli up and place into a pot with a little water and salt.
  2. Allow your veg to steam with the pot lid covering it; this should take no longer than 10 minutes on a medium to high heat.

Nearly ready
  1. Once your veg is nearly steamed your salmon should be ready. Place your salmon onto your plate including the peppers and the rest of your seasoning. Add your potatoes and greens and you can even sprinkle black pepper or parsley all over your dish to add some extra flavor!
